Ingredients:
- 1 medium onion, chopped
- 1-2 cloves of garlic minced
- 3 tablespoons Truly Greek EVOO
- Pinch of Truly Greek Sea Salt
- 2 teaspoons Truly Greek Herbs & Spices
- 8oz. can diced tomatoes
- 1 cup tomato sauce
- 1 bay leaf
- 1/4 cup Greek Red Wine
- 3/4 cup feta cheese
Directions:
- Clean and devein 2 pounds of shrimp. Set aside.
- Sauté onions and garlic in extra virgin olive oil (EVOO) until translucent.
- Add remaining sauce ingredients and simmer 20 minutes.
- To avoid over cooking the shrimp add to mix just before serving. Cook until shrimp are pink. (10 minutes)
- Serve over pasta. Garnish with fresh, chopped parsley or basil.
Optional: Add 1 cup Truly Greek Country Olives, sliced in half.
