SCRAMBLED EGGS WITH TOMATO

“KAGIANAS”

Ingredients:

For 4 portions:

5 medium-sized ripe tomatoes
4 medium eggs
4 tablespoons MALVA EVOO
1 tablespoon Greek Mixed Herbs & Spices
50gr feta cheese
Sugar – Pepper

METHOD

✅ Grate the tomatoes with the large blades, discard the skin and add them in a non-stick pan along with the olive oil.
✅ Heat over high heat. Add a pinch of sugar and cook for 6 minutes stirring occasionally with a wooden spatula, until it drains completely.
✅ In a small mixing bowl whisk the eggs and add them to the pan.
✅ Mix for 1 minute and as soon as they start to set, remove from heat.
✅ Add the grated feta, mixed herbs, pepper, and stir until incorporated.
✅ Serve with grilled bread.
