Recipe: Traditional Greek Meatballs

TRADITIONAL MEATBALLS

“KEFTEDAKIA”

Ingredients (for 4 portions)

100gr MALVA EVOO
400gr shortrib minced
1 big egg
12gr fresh parsley, minced
2gr thyme, minced
8gr mint, chiffonade
20gr lemon juice, strained
5gr table salt
0.4gr ground cumin
10gr spring onion, minced
30gr onion, cut in small cubes
5 gr garlic, minced

METHOD

✅ In a bowl add the minced meat, then the eggs, fresh parsley, thyme, mint, lemon juice, salt, cumin, onions, garlic and MALVA EVOO.
✅ Start kneading only for a couple of minutes (do not overwork the mixture).
✅ Scale into 20gr portions and then mold into balls.
✅ Freeze (you can keep the meatballs in bag).
✅ Fry the meatballs straight from the freezer, in very hot olive oil, only for 2 min.
✅ Drain on kitchen paper.
✅ Cover with a dump paper in case you eat them later, so they don’t dry out.
👨‍🍳 Avoid any sauce on the the side. Just a few moments before eating, add acidity and freshness by squeezing fresh lemon and top with fresh cut parsley. Must try!
