Their beautiful fruit is produced and harvested when they are various shades of green or purple; however, black olives do not typically occur in nature and are instead developed through processing after they are harvested.

MALVA Extra Virgin Olive Oil is produced by running the olives through the mill on the same day as harvest. This positions our oil to produce the freshest juice possible from the fruit.
MALVA olives are all privately owned on an olive grove of 96 acres of 2,800 trees of organic farming which averages about 12000 kg of oil daily!
